A delicious dish using cherry tomatoes, garlic, and eggs, inspired by the Italian version of shakshuka. The tomatoes are cooked with garlic and onion, seasoned, and then combined with eggs for a flavorful breakfast.
Preheat the pan and add olive oil, diced garlic, and yellow onion over medium-low heat.
Sauté until the onions are translucent and garlic is fragrant.
 Add the sliced cherry tomatoes.
Season with salt, pepper, red pepper flakes, torn basil, and diced parsley and bring to a simmer.
Cook until the tomatoes have burst and the sauce thickens.
Transfer to a blender for a smooth sauce or keep as-is for texture.
Add eggs into the tomatoes and cover until the eggs are set, about 2-3 minutes.
Toast some bread and rub garlic on it for extra flavor.
Once the eggs are set, remove from heat and serve on toast or in a bowl with a side of toast.
Finish with freshly grated parmesan, basil, and parsley for garnish.
